Pure Spanish saffron, called kesar in many South Asian recipes, brings colour and aroma to dishes. It is used in strands and in very small quantities. It is common in festive rice dishes, desserts and special preparations.
How to use it. Infuse a few strands in warm water or milk before adding them to the recipe so the colour and aroma spread better. Keep saffron tightly closed and protected from light and moisture.
Best for. Ideal for biryani, kheer, sweets, rice pudding and celebration dishes. A small amount is enough to scent a preparation.
