Buckwheat flour, known in India as kuttu ka atta, is a naturally gluten-free flour milled from buckwheat seeds. It has an earthy, nutty flavour and is a staple ingredient for Hindu fasting (vrat) days as well as everyday gluten-free cooking.
How to use it. Knead it with water, alone or mixed with another gluten-free flour, to make rotis, puris or parathas, or use it to make pancakes and pakoras. Work the dough gently, as it has no gluten to bind it, and use it soon after mixing.
Best for. Best for vrat fasting recipes, gluten-free diets and adding a nutty flavour to pancakes, fritters and flatbreads.
